Banana Bread

There’s nothing better than a one bowl bake that can be adapted into a variety of shapes and sizes.



This basic banana recipe can be made any way you like it and turned into bread, cake, muffins or even a bundt with caramel sauce.


The choice is yours.

Ingredients

+ 5 ripe bananas, mashed


+ 125ml light olive oil


+ 2 eggs, at room temperature


+ 1 egg yolk, at room temperature


+ 300g brown sugar


+ 1 ½ tsp vanilla extract


+ 225g self-raising flour

Method


Preheat the oven to 180ºC. Grease your chosen tin (loaf, muffin, bundt, round springform) with baking spray.


Place the mashed banana, oil, eggs, sugar and vanilla in a mixing bowl and combine.


Add the flour and mix until combined.


Pour the banana mixture into your chosen tin.


Bake for 45 minutes to one hour, or until cooked when tested with a skewer.


Allow to cool in the tin.

Optional: Caramel Sauce


+ 120ml water


+ 240g caster sugar


+ 240ml pouring cream


Combine water and sugar in a saucepan, and stir over medium heat until it comes to a boil.


Simmer, without stirring, until the mixture turns amber, and remove from heat.


Pour in cream and whisk rapidly until combined, then return to hear and stir constantly for approximately 3 minutes.


Pour into a heatproof jug and allow to cool to rom temperature (sauce will thicken as it cools).
